  1. Mix together vinegar, lemon juice and lime juice. Let it sit for about 10 minutes. Then add the remaining ingredients.
  2. Gently fold items together. Ceviche is ready to eat, but flavors are enhanced over time. Serve with tortilla chips.
  3. Store in refrigerator. Best eaten within 2 weeks.
